Jenis-jenis peralatan dan perabotan tata hidang :
a. Chair (kursi) : standar kursi dari lantai ke ujung sandaran = 100 cm,
tinggi tempat duduk dari lantai = 46 cm, lebar = 46 cm.
b. Table (meja) : penggunaan jenis meja disesuaikan dengan jenis
ruangan dan kapasitas setiap meja.
c. Linen (lenan) : kain untuk keperluan operasi restoran
- Table cloth : taplak meja
- Napkin : serbet makan
- Skirting : kain panjang untuk meja buffet
d. Glassware adalah peralatan makan dan minum yang terbuat dari kaca, yaitu:
Gelas bertangkai (stemug glass) :
- Water goblet
- Red wine glass
- White wine glass
- Champagne glass
- Cocktail glass
Gelas tidak bertangkai (unstemug glass) :
- Short glass
- Juice glass
- Beer mug
- Highball glass
- Wine carafe
e. Silverware adalah peralatan makan dan minum yang terbuat dari stainlees steel, logam, silver, gold atau plastik. Silverware terbagi menjadi 2 bagian, yaitu :
Cutlery :
- Dinner Knife : pisau daging, pisau besar yang disajikan untuk hidangan utama, uk : 20 – 24 cm
- Dinner Fork : garpu daging, digunakan untuk semua hidangan yang disajikan sebagai hidangan utama, uk : 19 – 21 cm
- Soup spoon : sendok sup, uk : 19 – 21 cm
- Dessert knife : pisau dessert, uk : 19 – 21 cm
- Dessert fork : garpu dessert, uk : 18 – 19 cm
